Spaghetti soup with vegetables

For pasta dishes, I always use Jovial Organic Rice Pastas. They have been safe for my son and the texture is very similar to wheat pasta. The taste of this spaghetti can be a bit bland, but it’s the beautiful colors that bring it alive.

Ingredients:

¼ cup of chopped kale or broccoli
¼ cup of shredded carrots
¼ cup of purple cabbage
½ cup of cooked Jovial Organic Rice Spaghetti pasta
1 tsp of salt
½ tsp of oil
¼ cup of water

Instructions:

  • Saute all veggies in oil for a minute
  • Add water and let it boil until color turns a bit purple
  • Add spaghetti
  • Add salt or ketchup or other spices as desired
