My Quest For Eczema-Friendly Recipes

My son has food allergies, eczema, and asthma. The toughest thing I’ve had to deal with is “What to feed him when he’s allergic to everything.” His blood tests and skin tests showed mild to severe allergies to almost all foods, including simple foods like potatoes, onions, peas, and delayed reactions to milk/wheat.

When his eczema turned from moderate to severe with stomach aches at the age of 3, I knew it was time. It was time to put him on an elimination diet, as his allergist had recommended. The toughest factor was cooking up flavorful meals for a child with 7 ingredients when he had been eating pizzas and pastas.

So, my journey started…All dishes are vegan and gluten-free, strictly use organic ingredients for all of my recipes… I started experimenting designing and architecture. I’ll share some simple, allergy -free recipes I use for my son. It takes so long to test new foods when the eczema is always active, and difficult to tell if the flare-up is caused by food or environment or something else altogether. So, it was definitely a long process to introduce some foods.

All berries, milk, citric fruits, nightshades, dairy, gluten, wheat products, colorful veggies such as bell peppers, and nuts are not allowed on this diet. Ingredients allowed on my son’s allergy friendly recipes or eczema elimination diets:

  • Cauliflower
  • Cabbage
  • Kale
  • Rice
  • Quinoa
  • Carrots
  • Apples – (restricted)
  • Moong lentils
  • Chickpeas
  • Rice Bran Oil
  • Honey, Cane Sugar – restricted
  • Turmeric – restricted

7 Simple Eczema Friendly Recipes

It’s a fusion between Indian and American.

1. Curried Cauliflower on Rice Tortilla (Cauliflower Pizza) (Eczema Friendly)

This simple recipe is a favorite one of my son’s. It’s a fusion between Indian and American. If you do not know how to make the rice tortilla, see my recipe here: Rice Tortilla.

Ingredients:

  • 1 Cup of cauliflower
  • 1 teaspoon of rice bran oil (any other oil and more or less if desired)
  • 1/4 teaspoon turmeric ( to your taste)
  • salt to taste

Any other garnish you’d like to add, such as crushed pepper or dried seasonings.

Instructions:

  • Heat up the oil in a pan with turmeric
  • Saute the cut cauliflower in the oil and salt until soft
  • Take a crispy Rice Tortilla
  • Smear the cauliflower on the tortilla evenly – crushing it with a fork
  • Toast in toaster over on medium heat – or bake in oven at 350 degrees until golden brown
  • Let it cool and slice with a pizza cutter

2. Cabbage Dinner Pancake or Parantha (Eczema Friendly Recipes)

Now, making Cabbage Dinner Pancakes is just so refreshing and easy. Engage yourselves in cooking healthy eczema-friendly food.

Ingredients:

  • ¼ cup of shredded carrots
  • ¼ cup of shredded green cabbage
  • ¼ cup of rice flour
  • 1 tsp of salt
  • ½ tsp of oil
  • Water as needed

Instructions:

  • Saute all veggies in oil until wilted
  • Mix all veggies and rice flour
  • Add water as needed until the batter becomes dough consistency
  • Add salt or ketchup or other spices as desired and mix well
  • Use tortilla press to roll into round pancake OR pour the batter onto greased skillet and use your hand to spread into round shape
  • Cook on medium-low heat
  • Grease the other side of the pancake as well
  • Turn or flip over when the edges brown
  • Keep on flipping over until both sides are lightly browned

3. Mung Daal with Rice (Eczema friendly Recipes)

One of the best easy to make eczema friendly recipe that can help you lot with its nutritional value.

Ingredients:

  • Boiled Rice- 1 cup
  • Mung Lentils – 1 cup
  • Water – 3 cups
  • Salt – 1/4 tsp (to taste)
  • Oil – 2 tbsp
  • Turmeric – 1 tsp

Instructions:

  • Soak a cup of Mung Daal lentils in 3 cups of water for 5-8 hours or overnight
  • Add oil to a pot on medium low
  • Add Mung Daal and lightly saute for a minute or so
  • Add water and salt to taste
  • Let it boil until the lentils dissolve and become soup like consistency
  • Serve with a side of boiled rice

4. Veggie Noodles Recipe

For pasta dishes, I always use Jovial Organic Rice Pastas and they have fettuccine style and noodles as well. They have been safe for my son and the texture is very similar to wheat pasta. The taste of this spaghetti can be a bit bland, but it’s the beautiful colors that bring it alive.

Ingredients:

  • ¼ cup of broccoli
  • ¼ cup of shredded carrots
  • ¼ cup of shredded green cabbage
  • ½ cup of cooked Jovial Organic Rice Spaghetti pasta
  • 1 tsp of salt
  • Pinch or turmeric
  • ½ tsp of oil

Instructions:

  • Saute all veggies in oil until wilted
  • Add a pinch of turmeric
  • Add cooked spaghetti and cook a bit more
  • Add salt or ketchup or other spices as desired

5. Spaghetti soup with vegetables (Eczema Friendly Recipes)

Ingredients:

  • ¼ cup of chopped kale or broccoli
  • ¼ cup of shredded carrots
  • ¼ cup of purple cabbage
  • ½ cup of cooked Jovial Organic Rice Spaghetti pasta
  • 1 tsp of salt
  • ½ tsp of oil
  • ¼ cup of water

Instructions:

  • Saute all veggies in oil for a minute
  • Add water and let it boil until color turns a bit purple
  • Add spaghetti
  • Add salt or ketchup or other spices as desired

6. Kale and Carrot Rice Patties with Cauliflower Sauce

The recipe is easy to make, eczema-friendly and can do wonders with your child’s health. Try this delicious recipe.

For Patties:

  • 1/2 Cup saute Kale in Rice Bran oil (or olive oil)
  • 1/2 Cup cooked brown rice
  • 1 Grated carrot
  • Pinch of salt
  • Anything else you would like to add for flavor.

Instructions:

  • Grind Kale, Carrots in a blender
  • Add Brown Rice and grind again
  • Make sure mixture is well formed together
  • Make the mixture into 1 inch balls
  • Heat 1/2 tablespoon oil on griddle or pan
  • Flatten balls into patties as desired
  • Pan fry these patties on low heat until brown, flipping each side

7. Rice tortillas – rotli (Eczema Friendly)

Now, making rice tortillas is so simple for you. Just need a few minutes to make healthier tortillas at your home.

Ingredients:

  • Rice flour – 1 cup
  • water – 1 cup
  • Salt – 1/4 tsp (to taste)
  • Oil – 2 tbsp

Instructions:

  • Heat the water in pot until boiling
  • Add oil
  • Add rice flour to hot water and mix with spoon until forms dough ball
  • Let it cool until warm
  • Knead the dough
  • Take a handful of dough and roll it with rolling pin
  • Bake in griddle flipping sides to the desired look and taste

    Across your story and shared it with me as we are looking at foods and allergy testing. I was wondering if you could share what testing you did that provided such a detailed list of foods that your son was allergic to? I also have lots of food allergies and the test I took is not available for small babies. I would appreciate a comprehensive test, any help would be greatly appreciated.

      Hi Miranda, we did prick test on our son when he turned one. I do not have a copy of those on hand, but they did about 12-15 foods at a time (and some environment allergens such as dustmites). He was either mildly or severely allergic to pretty much all foods according to that prick test, including foods like sweet potatoes, however, negative to milk. The allergist said that the blood tests are irrelevant for kids under the age of 2, so we waited until he was 1.5 years and did RAST. RAST showed severe allergies to cashews and some other nuts, but nothing much to others. However, his eczema persisted and was spreading each month. Then we did patch test at the age of 2 and he showed delayed reactions (post 48 hours) to milk and wheat. At the age of 5, we did blood test again as his eczema is under control and allergist did not want to aggravate it with prick test.
